This is an issue with the Adobe Acrobat Reader DC 2021 software being recognized as Adobe Acrobat DC 2021 (more specifically version 21.007.20099). The changes were made by Adobe, in terms of when they created the new 64-bit installation package for Adobe Reader.
There is a way to make the product recognized correctly, which is by using the installer provided by Adobe support, after performing a clean uninstall of Reader, and updating the product using the corrected installation.

Fix Adobe Reader installation
Step 01:
First, we must uninstall Adobe that is being identified as Adobe Acrobat DC by the Add or Remove Programs panel.
Step 02:
After the product removal procedure, we must remove all residual files from the installation, using the Adobe AcroCleaner tool, which was made available by Adobe support.
Step 03:
On the screen that selects the type of product to be uninstalled, select Reader
Follow the cleaning procedure until complete.
Step 04:
The next step will be to install the version of Reader that was provided by support, that is packaged in the correct package and distribution, and is correctly identified by Snow.
Step 05:
Proceed with the installation until it is finished. After the procedure, Adobe Reader should be installed correctly in your Add/Remove Programs panel.
Step 06:
Then open Adobe Reader and in the Help menu, click Check for Updates.
Step 07:
Update the product using this method until there are no more updates available for your software.
Ready! Your Adobe Reader should now be installed and updated, but recognized as Adobe Reader in the SAM software asset management portal.
